Double Chocolate chip protein cookies

INGREDIENTS
- 4 tbsps. stevia OR 3 tbsps. of coconut sugar
- 1 scoop Rule 1 Chocolate protein powder
- 4 tbsps. cocoa powder
- 1 tsp baking powder
- 1 Cup Greek yoghurt (FAT FREE)
- 3 tbsps. sugar free choc chips from Sweet Williams
- ½ cup of coconut flour
INSTRUCTIONS
Preheat oven to 180 degrees Celsius. Mix stevia, protein, cocoa powder, baking powder, coconut flour in a large bowl until smooth. Add Greek yogurt to the ingredients and stir until a soft dough forms then add the chocolate chips. Roll the dough into a soft ball and set aside for 20 minutes. Divide the dough into 8 pieces and flatten them onto a readily made baking tray with baking paper.
Bake for 15 minutes, they should be soft but NOT falling apart.
Leave on a cooling rack for an hour until cool, and enjoy!
Peanut butter protein cookies

INGREDIENTS
- ¼ cup coconut sugar
- 2 TBSPS almond milk OR coconut milk
- 2 TBSPS coconut flour
- ½ tsp baking powder
- 1 egg OR 3 egg whites
- 1 tsp vanilla essence
- ½ cup of Rule 1 Protein Powder
- ½ cup of Peanut butter
- Pinch of salt
INSTRUCTIONS
Preheat oven to 180 degrees. In a bowl add protein powder, coconut flour and baking soda until well combined. coconut sugar, almond milk, the egg, vanilla essence, protein powder, peanut butter . Mix until ingredients are well combined.
Use a small cookie scoop to drop cookie dough by the tablespoonful onto prepared baking sheet. The dough will be slightly sticky. Slightly flatten the tops of the cookies. Bake for 9-11 minutes until
slightly golden brown on the edges. Allow cookies to cool on cookie sheet for 5 minutes before transferring to a wire rack to finish cooling. Makes 12 cookies.
RAISIN PROTEIN COOKIES

INGREDIENTS
- 2 scoops rule 1 vanilla protein powder
- 2 tsps stevia
- 1 cup rolled oats
- ¼ cup coconut OR almond flour
- 1 tsp baking powder
- 1 egg
- 1 tbsp butter unsalted
- 1 tsp vanilla essence
- 1 tsp cinnamon
- 1/3 cup raisins
INSTRUCTIONS
Preheat the oven to 180 degrees and place baking paper on tray.
Add protein powder, flour, stevia, oatmeal, cinnamon, vanilla essence, baking powder,
Add a hole in the middle of the flour and add butter and egg into the mixture. If to dry add a splash of almond milk.
Place cookie dough into small balls and squish into circle on the tray.
Bake for 10 minutes.
